Delicious roasted peppers stuffed with plum tomatoes and feta. These Feta Stuffed Peppers are so simple but make a delicious light lunch.
Preheat the oven to 180°C (fan assisted, 200°C non fan)
Spray a baking tray with oil. Put the four pepper halves on the tray and divide the ingredients between them. Save some feta to sprinkle once cooked
Spray the peppers with oil and put in the oven for 30-35 minutes until the peppers have softened
Sprinkle over the remaining feta and serve on a green salad. Drizzle with some balsamic vinegar if wanted
