Tasty little stacks of potato flavoured with thyme. These Potato & Thyme Stacks will add a special touch to any meal.
Preheat the oven to 180ºC (fan assisted or 200ºC non fan assisted)
Using a mandolin or food processor, slice the potatoes into slices 2-3mm thick
Spray a muffin tin with oil. Cut the sliced potatoes into half or quarters so they fit into the muffin tin
Layer the potato slices into the muffin tin over lapping them to make sure there are no gaps. Every few layers, sprinkle some salt and thyme leaves
When you have reached the top of the muffin tin, spray with oil and sprinkle with a few more thyme leaves, salt and garlic powder
Bake in the middle shelf of the oven for 25 to 30 minutes. Check the potatoes are cooked through by poking a sharp knife into the middle
