Turn leftover mashed potatoes into a really simple and delicious meal perfect for anytime of the day. These Leftover Potato Patties are so versatile and can be cooked on the stove or air fryer.
Take 600g leftover mashed potato out of the fridge and break it up using a fork
Add 2 eggs and salt & pepper if required. Mix thoroughly
Heat 1 tbsp oil in a large frying pan over a medium heat
Scoop a large spoonful of the mixture into the pan and spread out to form a patty
Preheat your air fryer if required. Once preheated, line with parchment paper
Scoop spoonfuls of the mixture onto the paper
Using a fork, press the patties down into a flatter shape
Air fry at 200℃ for 16 minutes, carefully flipping half way through the cooking time
