These Lemon Thumbprint Cookies are super simple and very tasty. These fresh and zesty cookies are packed with delicious lemon flavour that is irresistible.
Preheat the oven to 160ºC (fan assisted, 180°C non fan) Line 2 baking trays and set aside
Rub 200g self raising flour, 100g caster sugar and 100g margarine together until you have a breadcrumb texture
Add the zest from 1 lemon, 1 egg and ½ tsp vanilla extract to form a stiff dough
Fill each indentation with a small amount of lemon curd
Keep in an airtight container for up to one week.
