Crispy skinned Roasted New Potatoes are fluffy inside and flavoured with herbs. They make the perfect side dish for so many meals.
Preheat the oven to 180°C (fan assisted, 200°C non fan assisted) Thoroughly wash the potatoes and remove any black bits/eyes
Cut any large potatoes in half so that they are all roughly the same size.
Add the potatoes to a roasting tin and drizzle with olive oil. Toss the potatoes so they are all coated in the oil
Sprinkle the potatoes with salt and add the sprigs of herbs and garlic cloves
Roast in the oven for 45 - 50 minutes, turning the potatoes half way through. Remove the herb stalks before serving
