
Wonderfully crisp on the outside and soft within, these Air Fryer Smashed Potatoes are incredibly delicious. A simple and tasty side dish that makes the perfect accompaniment to so many meals.
Remove any eyes from 500g new potatoes and stab each with a sharp knife. Place them on a plate
Cook in the microwave for 8 minutes until you can easily insert a sharp knife
Preheat your air fryer if required
Carefully transfer the microwaved potatoes to a chopping board and smash them with something flat such as the bottom of a heavy bottomed glass. Smash them so they are roughly 1cm thick
Transfer the potatoes to your air fryer basket. You may need to cook the potatoes in batches depending on the size of your air fryer
Brush the potatoes with 1 tsp sunflower oil (or use spray oil) and sprinkle over 1 tsp sea salt
Cook for 10-13 minutes at 200°C until your preferred level of crispness
If your microwave has a low wattage you may need to cook the potatoes for slightly longer than 8 minutes. Likewise if your potatoes are really small they may take less time to cook.
I like to use sunflower oil in a spray bottle. I do not recommend using Fry Light as this will damage the coating on your air fryer basket.
Use a sturdy flat implement to smash the potatoes.
