I am a fussy soup eater
Soup has for many years been something I have been incredibly fussy about. I had a bad experience with some Heinz tomato soup when I was a lot younger and it has stuck with me.
I don’t eat soup in restaurants and I have only found one bought soup that I liked which was Covent Garden chicken soup; but then to my disappointment they changed the recipe.
This means that if I want to eat soup, I make it myself.
Using a soup maker
My Mum bought me a soup maker a few years ago and it is just fantastic. Instead of following different steps and waiting for the soup to come up to the boil and then liquidising, this soup maker allows you to put all the ingredients in the machine at the start.
It then does all of the work itself taking 21 minutes for smooth soup or 28 for chunky soup.
Using the soup maker has made making soup so much easier and quicker. It also means I have been able to experiment with even more flavours.
I am quickly expanding my soup repertoire which is a definitely plus!
Why use broccoli in soup?
Broccoli soup was something my Mum used to make us growing up. This Easy Broccoli Soup was one of the first recipes I tried to recreate in my soup maker.
I love broccoli as it is so broccoli soup was always going to be something that appealed to me. There are other recipes out there but a lot of them add cheese.
You obviously can do this but I don’t fancy cheese with my broccoli soup!
Which kind of broccoli is best to use?
Up until recently, I had always used fresh broccoli to make this Easy Broccoli Soup.
As you may know I am a little obsessed with Tenderstem broccoli. So when I saw you could buy it frozen I jumped at the chance of stocking up.
I made my Roasted Parmesan Tenderstem Broccoli with it and was seriously disappointed. It didn’t taste the same as the fresh broccoli at all!
I wanted to make this, but only had the frozen Tenderstem broccoli. I gave it a go and it worked fantastically! It tasted just as good as using fresh broccoli.
So fresh or frozen, whatever you have will make a delicious soup!
Make it a bit more luxurious
This Easy Broccoli Soup is a lovely and healthy meal.
But that doesn’t mean you can’t make it a bit more luxurious if you want to! Instead of using semi-skimmed milk, you can use whole milk. This would add an extra creaminess to the soup.
A lovely way to finish this soup is to add a drizzle of double cream. You only need a small amount but it finishes off the soup nicely!
Can I freeze this soup?
Absolutely. Make sure you put the soup in the freezer within two hours of the soup being cooked.
You can defrost the Easy Broccoli in the fridge, or you can heat it in a pan on the hob from frozen. This is great if you decide last minute you want soup!

Easy Broccoli Soup

Ingredients
- 1 small onion diced
- 500 ml chicken or vegetable stock
- 300 g broccoli cut into florets
- 300 ml semi skimmed milk
- ½ tsp sea salt
- pinch black pepper
- 1 tbsp cornflour mixed with 2 tbsp water
To finish
- 2 tbsp double cream (optional)
Instructions

Dice the onion and cut the broccoli into small florets

Add all of the ingredients to your soup maker/pan

If using a soup maker, set to the smooth setting

If using a pan, cook for roughly 10 minutes until the broccoli has softened and then blend with a stick blender or in a liquidiser

Such a great recipe and, although I love cheese, it does tend to go a bit stringy in soup, and your soup is super smooth and creamy.

It’s abit runny for my liking I didn’t want to add the cream as trying to be careful, any idea what I can do to thicken it?

Hi Becs, this is a thinner soup than others. You could add a small potato diced quite small along with everything else to your soup maker, that will be a natural thickener.
