Roasted New Potatoes

Crispy skinned Roasted New Potatoes are fluffy inside and flavoured with herbs. They make the perfect side dish for so many meals.

Elevate your new potatoes

Boiled new potatoes have always been my least favourite type of potato. To be honest I find them a bit boring. We used to have them quite a lot when I was growing up and I always remember being a little disappointed.

Don’t get me wrong, they are nice as a change, but I would prefer to have something else.

These Roasted New Potatoes are my preferred way of eating new potatoes. I love how the skin gets crisp but the inside is still lovely and fluffy. The herbs also add lovely flavour to them.

Roasted New Potatoes are a quick side dish to prepare

I almost feel a little bit cheeky calling these Roasted New Potatoes a recipe because they are so simple. It is more like assembling rather than an actual recipe!

This recipe gives them a lot more flavour in my opinion than just boiling them in salted water. They are really simple to prepare this way, but I think it makes them look like you’ve put a bit more effort in.

After you have prepared the potatoes, you can leave the oven to do the work. All you have to do is turn them half way through. This means you can get on with other things which is great if you don’t like hands on cooking.

Which herbs are best to use?

You can use whatever herbs you would like. I would recommend using hard herbs – the ones with woody stems. Soft herbs like basil wouldn’t cope very well with the longer cooking time.

I like to use a combination of thyme and rosemary because these are two of my favourite herbs. I do often just use one or the other depending on what I have.

There is no need to pick the leaves off the stalks as during cooking, the leaves seem to fall off themselves. This then makes it really easy to just pick out the stems once the potatoes are finished cooking.

Although using fresh herbs is nice, you can definitely still make these Roasted New Potatoes if you don’t have them. Dried herbs would work really well as an alternative.

Can I cook these Roasted New Potatoes in an Air Fryer?

Yes, these potatoes are really great cooked in an air fryer. Head over to my Air Fryer New Potatoes which are very similar to these roasted potatoes just without the herbs and garlic.

You can obviously add the herbs and garlic to the air fryer recipe, but I would recommend adding them half way through like I do in my parmentier potatoes.

Roasted New Potatoes

Ingredients

  • 500 g new potatoes
  • 1 tbsp olive oil
  • 1 ½ tsp sea salt
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 3 cloves garlic

Instructions

  1. Preheat the oven to 180°C (fan assisted, 200°C non fan assisted) Thoroughly wash the potatoes and remove any black bits/eyes

  2. Cut any large potatoes in half so that they are all roughly the same size.

  3. Add the potatoes to a roasting tin and drizzle with olive oil. Toss the potatoes so they are all coated in the oil

  4. Sprinkle the potatoes with salt and add the sprigs of herbs and garlic cloves

  5. Roast in the oven for 45 - 50 minutes, turning the potatoes half way through. Remove the herb stalks before serving

    Roast potatoes with rosemary are a firm favourite with me. I’ve never tried roasting them with thyme, so might give that a go now. I’ve also never tried roasting new potatoes.

      I love adding thyme and rosemary to potatoes. You should definitely try roasting new potatoes! Its so easy and no peeling involved!
